This morning I got up thinking . . what will I ever talk about now that the CO issue is hopefully resolved? That has consumed my thoughts for five days. Really, I wasn’t sleeping good in the other bed and was taking a nap every day, and said naps probably contributed to my not sleeping well at night. I was so happy to be back in the good bed last night.
I will add “water heater nowhere near master bedroom” on my list of things that matter to me when looking for a new home.
So .. where does the ham come into this?
We had two big hams in our freezer and as we were trying to make room, we took one out and put it in the fridge. It has taken days for it to defrost but yesterday I baked it. We had ham sandwiches and Pioneer Woman’s Tomato Soup. Homemade sourdough bread; homemade soup – yum.
There’s a lot of ham left. A lot! Here’s the plan:
- Ham and cheese omelettes for breakfast today.
- Ham and Scalloped Potatoes for dinner (cooked together)
I probably shouldn’t fix ham for breakfast and dinner but I love both those dishes.
I’ll probably freeze some of the ham but I plan to make the following at some point:
- 10 Bean Soup with Ham
- Vegetable Beef Soup with the bone
- Ham & Eggs on English Muffins (Breakfast)
- Iowa Chowder
- Croque Madame (Breakfast)
- Ham & Cheese Tortellini
That’s probably more recipes than I have the ham to make but . . guess what! We have another ham in the freezer!

I have a ton of ham in the freezer, because I prefer “real” ham with the bone in it. I usually buy a ham for Christmas, but that is a lot of meat for one person…I made homemade ham salad with a pound of it a couple of weeks ago. I should probably get some more out of the freezer and make another batch. Maybe I won’t do a whole pound this time…I felt like I was eating ham salad for every meal to get it used up! I can do some ham and potatoes, and then ham salad with the rest. Hmmm.

We buy hams at Aldi after Christmas and usually after Easter but this year we didn’t go after Easter. They’re sometimes 25 cents/pound as they get close to the expiration date so we usually have several in the freezer. Like you, I prefer the real ham with the bone so I can make soup. Ham salad sounds yummy too!

I scored 2 cheap hams at Aldi after Easter and while I love it, it is a pain to cut up and freeze. I know I won’t complain when I am eating it a month from now, though. We bought a ham dinner for Mother’s Day (pick up) from a local restaurant and it was pressed ham! I couldn’t believe it. We haven’t been back since (not that we go out much, anyway).

That’s crazy to have pressed ham at a restaurant! That’s when we usually get hams on sale at Aldi – after Christmas and after Easter. We missed Easter this year but had the two from Christmas.

I like ham and asparagus. Use some of your great sourdough bread, toasted or grilled. Top with ham slices, lots of lightly cooked asparagus, and cheese sauce. Under the broiler or baked until bubbly and browned. Serve with fresh tomatoes or fruit. Another is a baked Monte Cristo. Ham, Swiss, grilled on your favorite bread, topped with a white sauce made with half milk and half chicken stock. Sprinkled with parm and baked until bubbly. I slide some peach halves into the dish to bake with the sandwich. One is enough for two people. Now I’m hungry for ham!

Meat isn’t my favorite thing to freeze dry. I have things stacked up waiting to be freeze dried – peaches, onions, garlic, squash, asparagus and peppers. This time of year I need two freeze dryers.
