Last week we were watching some Pioneer Woman shows/videos and I saw her make two different dishes with tater tots. Since then I’ve been wanting tater tots, especially a tater tot casserole.
Yesterday I was looking online for the recipes she used. I came across this one on her – Tater Tot Hot Dish. I know it isn’t the healthiest of dishes but oh, my goodness . . it was delicious! And, it made a lot! I divided it half, baked half and froze half. We’ll get two meals out of each half. What’s not to love about that? And, it’s basically a one pot meal.
Also, I used about 3/4 pound of ground beef so it’s definitely a recipe where the meat can be stretched.

You know if it starts out looking like this, it has to be good!

Then I added mushrooms to the mix.

Just seeing the picture makes me want to go in the kitchen and heat up the leftovers for breakfast.

The changes I made to the recipe:
- Instead of the top sirloin recommended, I used ground beef.
- I didn’t have a poblano pepper nor did I have cilantro so I just left that out. It would have been better for sure with cilantro.
Otherwise, I think I followed the recipe . . as much as I ever follow a recipe.

When I hear or read “Hot Dish” it reminds me of Garrison Keillor and his Lake Woebegone series! They are the funniest tapes I think I have ever heard. And there is nothing suggestive and no dirty language, just good humor!
