When the veggies just start getting ready, there’s usually one of this and one of that til they all get going and I have an abundance of everything.
I had been watching the yellow squash and it was to the point of getting too big if I didn’t pick it soon but there were no other yellow squash that were ready to pick so I grabbed it and then pulled the biggest zucchini I saw, then there was a potato plant that was dying so I pulled it up and there were two potatoes still attached. I need to dig around and get the rest out but I didn’t have a shovel with me. I picked the asparagus that was ready (this was yesterday morning), pulled up two radishes to go into a salad and found one pepper that was ready.
I scraped the potatoes – those fresh potatoes, the peelings just fall off when I scrape them with a knife, cut them into small cubes, browned them in some butter and olive oil, then cut up the yellow squash and zucchini, added that to the pot, along with a chopped onion and some garlic. Near the end, I added the asparagus and pepper, salt and pepper and we had a yummy veggie medley and . . I forgot to take pictures but you have to take my word for it that it was really tasty and fresh!
