If you haven’t figured it out yet, I’m pretty enamored with the Sourdough by Foodbod site/recipes.
Several times I’ve read over her Breakfast Mix Loaf. I’ve been wanting to try it but there have been too many other things to try. Yesterday I did it. . started the Breakfast Mix Loaf. I had to make a few changes. We had roasted pumpkin seeds but they were way past the expiration date and nuts just don’t last so I tossed those. I had sunflower seeds and they have lots of time left before their expiration date but that’s another thing from Aldi that goes bad way too soon. They were rancid so I was running out of options. I had walnuts so I toasted some of those and used them.
For the spices, I used fresh ginger and added it to the dough. I didn’t have cardamon and when I looked at the price online, I think I’ll just skip that. Not spending $9 for a little bottle. For the dough, I used the Flic Floc to roll steel cut oats so they were smaller than rolling whole oats. I coated the outside of the dough with whole oats that I rolled in the Flic Floc.
Otherwise, I pretty much followed the recipe.
That bread is so delicious! I was a bit apprehensive about using turmeric. I do not like the taste at all, though I know it’s terribly good for you. I think it tastes like dirt! But, for the health benefits, I added it. I can taste it in this bread but the cinnamon is strong enough to mask the turmeric flavor a bit.
For breakfast I sliced a piece and had it with butter. But I kept thinking about it so I had a second piece, with butter, cinnamon and sugar that I toasted under the broiler.
I have a feeling this is a bread that’s going to be made over and over.

I needed cardamom for a recipe – and could not believe the price when I was actually able to find it! Needless to say, the recipe was made without it. I found this out: “Ground ginger can replace cardamom in recipes. Nutmeg can me mixed with other spices as a substitute for cardamom. Cinnamon can often be used as a substitute for cardamom. ” but now cannot remember if used ginger or nutmeg!

This recipe has ginger, nutmeg and cinnamon so I think it’s just fine without the cardamon. Thanks for sharing that info.

I keep cardamom around, both ground and whole. My family Christmas bread uses cardamom. We always used whole; my mother would put it (peeled) into a piece of fabric (calico?) and pound it with a hammer on a smooth cement surface. One year I couldn’t find whole cardamom and substituted pre-ground; I have kept it around since. It’s a special scent for me.
I know what you mean about turmeric. I finally figured out that that’s what “earthy” flavor means! I think cumin is slightly earthy, too, but only if used in excess. The last time we made chili, I forgot the cumin at first. A taste test revealed a not-quite-right flavor; kind of thin. I remembered to add cumin to *ahem* ground it!

I may end up buying cardamon but I may not. The bread was great without it. I also think cumin is a bit earthy but turmeric is just a bit too earthy. Vince doesn’t like cumin and I like it a lot.
