My plans for today: Help get the garlic harvested and heat up the enchilada casserole for dinner. Yay leftovers on a busy day! At breakfast, I even asked Vince: Is it ok with you if we have leftover enchilada casserole for dinner? Yes. Do you want me to fix more beans? Yes.
We were out working on the garlic. Vince was digging and I was putting it out on the drying racks. Last year I was digging and he was putting it on the drying racks. I like this year’s jobs better!
Vince loves garlic. He said “I wish we could have Chinese Stir Fry tonight with lots of garlic!” Hmmm . . we can do that! Yes, I’m dead tired but I aim to please!
Vince bought this meat the other day when he went to the store. Stir Fry. What’s that? What part of the cow does that come from? I think it was more like trimmed off other pieces. Being the lazy cook that I seem to have involved into, I took it out of the plastic, put the frozen hunk of meat in the pressure cooker, added beef broth and pressure cooked it for 35 minutes. When it was done, I tasted it and it was still tough as leather so I cooked it another 35 minutes and it was chewable.
I pulled carrots, picked a zucchini, picked some asparagus, grabbed snow peas from the freezer (also from the garden). The garlic and onions came from the garden. The bell pepper and broccoli came from the grocery store.
See the garlic in the little jar? That’s 1-1/2 cups of garlic! I started with one cup. Vince came into the kitchen and I said “Is this enough garlic?” He said “I REALLY love garlic!” so I cleaned another half cup.
I drained the beef and browned it. Then I removed it and put the veggies in the pot in order of the ones that took the longest to cook.
Then I made a sauce, made fried rice and we had dinner.
The entire time we were eating, I was saying “Thank you for thinking of this!” It was so good!
I think I could eat fried rice every day! It’s like a one pot meal.
The best part . .
Leftovers! Those are half gallon jars so I won’t be cooking for a few days. Enchilada casserole tomorrow and Beef Stir Fry and Fried Rice on Sunday . . assuming today is Friday but I’m not even sure! 🙂

We too love stir fry and garlic but as I’ve gotten older garlic just doesn’t agree with me–especially raw like in a Cesar salad dressing. 🙁 🙁

I never understand people who won’t eat leftovers. It’s almost always better the second day!
