It seems several friends on Facebook keep making me bake things things! I have to blame someone for my bad deeds so today, equal blame goes to CJ and Marcia.
CJ makes a blueberry lemon cake that makes me want to get in the car, drive through forbidden places/states (virus), stop a bathrooms along the way that are likely havens for communicable diseases, cross scary bridges and show up at her house for the crumbs left on her plate! Every day for the past week, I’ve said I was going to make that cake. Today was the day. I was digging trying to find three cake pans. Three cake pans? Why would I make a cake that required three cake pans? I am so NOT a cake maker. Give me bread or a pie and I’m in my element but cake . . no! The sad thing is that I will only eat cake, brownies or cookies the first day I make them. After that, I don’t like them and Vince ends up eating the whole thing. CJ freezes half or more of her cake but . . well, I wasn’t going to say that she takes it out of the freezer the next day and finishes it off but I’m just repeating what she said!
I talked myself out of making three layers and decided a sheet cake should taste just as good . . right? Probably not and that still wouldn’t change the fact that I’d only eat it one day. Maybe I’ll half the recipe and and put it in a 9 x 9 pan. By then, I’d talked myself out of it but I still had those blueberries sitting on the counter.
Then, I saw that Marcia was baking Blueberry Banana Bread. Vince is the banana eater here and I didn’t want to use all his bananas so I said “How many bananas do we have?” He looked over at the fruit bowl on the bar and said “We have 3 that are overripe, 3 that are just right and 6 green ones!” Ahhh . . Blueberry Banana Bread I shall make!
I had planed to make Marcia’s Baked Bean recipe today but got so caught up with the freeze dryer pump yesterday that I forgot to put the beans on to soak. I’m planning to cook those outside in the solar oven – not about to run the propane fueled inside oven when it’s already near 95+ degrees here. The beans could take up to 6 hours. That’s a lot of propane and a lot of air conditioning. I can use the solar oven outside for free.
I think tomorrow will be just fine for using the solar oven. In fact, the next chance of rain is May 28. It’s going to be a long, hot, dry summer!
