Last week a blog reader sent me a recipe for Asparagus Croque Monsieurs. I had everything I needed to make them but didn’t have Gruyere cheese. I knew I was placing a grocery order last night but wouldn’t you know it . . the little store where I placed my order didn’t have Gruyere cheese either.
Since I never follow directions anyway, I figured I’d just sub pepper jack for the sauce and use Swiss for the top.
Mine aren’t so pretty because after the final time under the broiler, I decided they needed more cheese sauce so I spooned a bit more over them.
I used the black bread (with the coffee grounds), the homemade spicy mustard, the different cheeses and everything else was the same . . hmmm . . that’s only the asparagus and prosciutto that I didn’t change but they were super good. I had leftover cheese sauce so I can make these again soon.

And who cares if you had the right cheese if it was delicious with your substitutions. You could say you were inspired by the recipe. LOL
