Keeping my hands busy seems to keep my mind from wandering and dwelling. I thought that I wanted to knit socks – something easy and not requiring a lot of thought but I realized my mind wanders while knitting something so easy. They’re really pretty so I’m still knitting on them. Then I thought maybe working on something that required more thought but I’m still thinking about what I want to make. Hmmm . . I should try finishing something, right?
Cooking seems to be what I enjoy the most but you know that means – we’re eating what I cook.
Today’s main meal is going to be Pioneer Woman’s Tomato Soup, which I would eat every day if it were up to me. With tomato soup, grilled cheese sandwiches are required and we were out of sandwich bread so I stirred up the dough for a single loaf of King Arthur’s Classic Sandwich Bread.
I love homemade croutons but won’t eat storebought croutons. The leftover focaccia bread from last night was cut into cubes, a bit of olive oil was drizzled over them, along with some Italian herbs, onion powder and salt.
The bread is almost ready for the oven. I’ll bake it, along with the croutons and then we’ll have our yummy soup and grilled cheese sandwiches.
In the meantime, back to knitting on my pretty socks!

i wish I enjoyed cooking, but I don’t. However, I do enjoy eating. And I get great enjoyment out of watching Food Network and from reading recipes. I could have fun being a taster for someone else. LOL
