Also as part of our “sit on our butts on Sunday” plan, I told Vince we were having chicken sandwiches for dinner. I was going to use the Aldi “red bag” chicken that tastes like Chick-Fil-A, and the last of our brioche buns from Aldi. I did plan to bake potatoes and make a salad.
Then, my friend, CJ, posted on Facebook a recipe for potatoes and sausage and that looked so much better than a chicken sandwich. I had thought we were out of potatoes but found a whole bag. I had just been digging in the freezer for something and found some good cajun sausage from Louisiana so that’s what I fixed for our meal.
I love potatoes. CJ made hers in the slow cooker but I’m not much a slow cooker fan so I made ours in the oven. It’s basically sausage, potatoes, a can of cream of mushroom soup and spices. I browned the sausage first because the cajun sausage can be a bit greasy; then I slice an onion and cooked it before stirring it in.
I picked a bunch of greens to make a salad.
I roasted the beets, then added the asparagus and roasted it a bit.
Next, I made a homemade Thousand Island Dressing (mayo, ketchup, pickle relish, a bit of white vinegar and a chopped boiled egg).
It was a delicious meal. We are surviving!
Last night Vince was watching the show “Naked & Afraid”. I told him . . we’re kinda like those people in some ways. We both laughed. We still have a warm house to keep the bugs away. We have food . . it isn’t easy every time to pull meals together with what we have. I think we have one more cutting of kale in the garden and then it’s gone. I believe we’ve used all of our fresh veggies, except carrots. There are canned veggies so we’re not hungry yet!
