Of course, yesterday we had corned beef and cabbage. It’s weird because Vince likes almost everything but he doesn’t like corned beef and he doesn’t like fried gizzards and those are two of my favorite things. I no longer fix corned beef except for St. Patrick’s Day.

Aldi had this mix last time we were there. I had used it last year and knew i was good so I got it again and made it yesterday.
As I was making it, I thought to myself . . Easter will be the next holiday – April 12. Will we be able to get out and buy special Easter things? I doubt it. I’ll just plan on making Easter cookies and decorating them. That will have to do if we’re still staying home away from people.
I know we have a ham and a turkey breast in the freezer. I even have Stove Top dressing and I happen to like it! When I was in MO after Christmas, they had it on sale for 25 cents a box. I bought several boxes, left some in MO and brought some home. We’ll do what we have to do and we won’t complain.

The last time I was at the grocery, they actually had lamb steaks in a vacuum sealed bag. I bought it for Easter..
I haven’t made the bread yet, but I have the stuff to make the Homesick Texan’s Irish cheddar and bacon soda bread. I use Canadian bacon instead of the Irish bacon. It’s wonderful!

Smart move to have everything ready when you need it. You do know there are 2 cases in Brown County now don’t you? One is a woman in her 60’s who had traveled internationally and the other is a man and they care flighted him to Ft. Worth. So it is already here. Just need to be very careful!

Husband has not 1 drop of Celtic blood in him, but he likes corned beef! Luckily I love cabbage! Haven’t had fried gizzards since my mom died. I used to love those!

I like Stove Top dressing a lot! Your attitude is exactly right. I hope to have some luck with a few more things at the grocery store tomorrow, but that’s it, then. We’ll get by on what we have until we don’t have any more.
