A blog I love, Dirt Road Scrapper, posted a recipe last week for Hamburger Vegetable Soup. She always posts such good recipes – the kind of food we like.
Lately, I’ve become such a fan of soup. I was telling Vince last night that I think I could eat soup every day. I don’t think he agreed but he didn’t say no so . . maybe.
I never follow a recipe completely. The recipe called for two pounds of ground meat and I only had one pound thawed so I went with one pound. I didn’t have Rotel tomatoes so I added a chopped jalapeno pepper.
As I was getting it all going, Vince came in and said “Can we put greens in there?” I said “If you pick them and wash them!” so he did.
Obviously those greens are organic with all the bug holes on them.
I cut out the stems, gave those to the chickens, looked at that pot of soup and said . . no way am I going to be able to fit greens in that pot so I took some of the soup out and put it in another pot.
It was delicious soup and we have leftovers for at least two more meals. I highly recommend it.

This is another recipe I’d love but hubby would turn up his nose at, then ask me what else there was to eat! I always said I’d never marry a man as picky as my father, and look what I end up with! Hubby is MUCH worse than my dad ever was!! Guess I’m used to it, though, because we’ve been married 43 years as of last Thursday!!

I am happy making soup all winter! One pot meal for us, and is warming and satisfying. I make it very often. We loved the White Chicken Enchilada you posted a few weeks ago. Was so simple and delicious…..hmmm, may need to pick up those ingredients on my next grocery trip.

I like soup. As long as there’s meat in it, my younger likes it, and the older likes pretty much anything, so we have soup fairly often. Right now there’s sort of beef stew in the fridge – beef stew crossed with veggie chili, I think. LOL
