Ever since I left Louisiana 20+ years ago, I have missed good, cajun sausage. When I’m back in Louisiana, I bring back as much as I can but it’s never enough to last til I go back and get more. The sausage here, in MO and in KY and probably everywhere except Louisiana is good but it seems “generic”. Even sausage that claims to be cajun or from Louisiana just doesn’t taste like Louisiana sausage.
Chad makes a lot of really good sausage – several different varieties. Here’s a blog post of when we made sausage when I was there last time. He has it down and he makes good Louisiana sausage.
We’re pretty much trying to stay home and not go out since we’re in that over 60 age group. That’s much easier for one of us than it is for the other one! Want to guess which one is wanting to go somewhere every day? I feel a bit like the mother of a child and I’m trying to find ways to keep Vince entertained at home.
A couple of years ago, we bought a bigger Cookshack smoker with the intent of smoking sausage and we’ve never done it. What’s funny is when I went to look for the post for the new smoker, I realized we’ve had our older smoker for almost 15 years. We have used the heck out of that thing.
Anyway . . I said to Vince “Hey! Want to make some sausage?” He said “Sure!” so I told him that I’d like to order the sausage stuffer like Chad has and he said “Do it!” so I did it.
We no longer have Prime so it takes things a little longer to get here. It will be here sometime between the 13th and 17th. I ordered the casings from Pleasant Hill Grain because I needed a few other things from them anyway.
I’m excited to try our hand at making sausage. I have several recipes I want to try. In Louisiana, everywhere you buy it, the taste is a bit different. Chad’s favorite place to get it isn’t my favorite place to get it. Both are good but we each like ours a bit different. It will be fun to experiment – especially if Vince will do this with me.

My next purchase for my KitchenAid stand mixer is going to be the meat grinder/sausage maker. Wanted it for Christmas but hubby couldn’t find it, and he won’t shop online. Hope you enjoy using yours!

I have the sausage maker attachment for my Kitchen Aid and it’s good for small batches but when we’re making sausage for the smoker, I’d like to make more. Plus, the one I ordered is hand turn and not electric, which made it a whole lot easier to fill the casing just where we wanted it than it did with the electric version. I’m not sorry I have the attachment for the mixer and I think you’ll love having it.

You can literally build a roller coaster, or building piece by piece if you want. Lots of creativity. There’s also done of how to videos on YouTube.
These are light years ahead of the old Rolleroaster or Zoo Tycoon games.
