There are many foods that are my favorites and cabbage rolls would be in my top 10 favorites. Saturday I took ground beef and ground pork out to defrost so yesterday morning, I knew I had to get those made before I went outside, started working and got too tired to cook.
I think they were quite pretty.
Thank goodness for the 8 quart pressure cooker from Aldi because all of this would not have fit in the 6 quart pot.
Yellow eye beans and cabbage rolls. Yum!
The best part – each of the plastic containers has enough for two meals. Each jar has enough for one meal and there are enough beans for one meal.

I like cabbage rolls but hubby won’t touch them with a ten-foot pole, so I’ve never made them…probably never will. :–(

I love them too. Have you tried a low carb version of them yet? I made low carb dirty rice yesterday and well, it worked but not the same. I used Savoie’s cajun dressing mix (future in-law’s go to and well my cajun game ain’t strong. Louisiana Yankee! lol) and riced cauliflower. The cauliflower stole the show. I make it with rice for the kids though.

I have not tried it but I do have riced cauliflower in the freezer. Thanks. I don’t think I can get Savoie’s dressing mix here (I love it too) and I’m out so that’s on my list for my next Louisiana run.

I have good memories of making cabbage rolls with my mom whenever she visited me. They were wonderful to eat and we would freeze a bunch to enjoy later. She used an enameled 9×13 pan. It didn’t look like much but I grabbed it one time when we were traveling to my home. It encouraged her to make them more often !
