Vince had a dentist appointment this afternoon and it took about three hours. I was enjoying my time alone, knitting, listening to Pandora. I kept telling myself I needed to come up with a plan for dinner but I was totally absorbed in my knitting.
I happened to look at Facebook and saw that a friend had shared what she was having for lunch. She had sweet potatoes, black beans, cilantro and yogurt.
Leaving a comment, I asked how she fixed the sweet potato. She baked hers in the microwave since she had just one to cook. Not being a fan of the microwave, I cooked ours in the oven, fixed black beans in the Instant Pot and kinda took it from there.
To my friend’s ingredients, I added avocado and lime juice.
A bit of salt and pepper and the biggest part of our dinner was ready.
I can only go so long without Pioneer Woman’s Tomato Soup. That was what I had planned to cook tonight but hadn’t decided what to fix with it til I saw the sweet potato/black bean salad.
I was impressed with dinner . . if I have to say so myself! 🙂

I do usually skip the sugar. Today I had a bottle of marsala handy so I used that but I don’t always use anything.

I am hooked on Panera’s tomato soup. I will have to try this.

As you might imagine, there’s no Panera here. There’s one in Joplin and I try to eat there when I’m in MO. I’ll have to try their tomato soup for comparison. Thanks!

I’m glad you enjoyed it! Some people don’t like sweet potatoes fixed in a savory fashion – they want sugar and cinnamon, etc. I love sweet potatoes and black beans! I think they’re sweet enough on their own. I love sweet potato fries in the air fryer, too! I eat them with mustard, and it give them a sort of sweet and sour flavor. I guess I’m odd, but I’m OK with that!

You know how much I love sweets but I don’t like my “food” to be sweet. I’d rather have savory at meal time and then have sweet potato pie! 🙂
