There was a cafeteria in our town when I was growing up and they had the best Chicken, Broccoli, Rice & Cheese casserole. That’s what I’ve been wanting to make so yesterday was the day. I looked at several recipes and this recipe is the one I basically used.
I like the chicken shredded and not just in bite size pieces, and I like the broccoli really cooked and not still in whole pieces so I didn’t exactly follow the recipe.
Here’s where the lazy cook comes in. I didn’t have any defrosted chicken. I started to use some of my home canned chicken but decided I’d rather save my canned chicken so I pulled out a bag of frozen chicken breasts – three boneless, skinless breasts frozen solid. I put them in the pressure cooker, one big hunk frozen solid, added water and a tablespoon of chicken Better than Bouillon, cooked it for 30 minutes on high pressure. Then I took it out, cooled it a bit and shredded the meat.
Back to following the recipe, I sauteed the onions and garlic in butter, then added the chicken back to the pot. Then I added the rice, broth and broccoli because I wanted the broccoli really cooked. I cooked that on high for 8 minutes, then back to the recipe – added milk with flour and cheese.
That’s exactly how I love my chicken, broccoli, rice and cheese and I’m so glad we have leftovers and can have this again today.

Looks good. I can’t eat broccoli, but even without that, I think it would be good.
