Today’s meal was going to be leftover chili . . til I went to the freezer to find frozen chicken livers to take out to defrost so I can make Rita’s food tomorrow. That’s when I saw a bag of homemade tamales that were frozen so I brought those over, stuck them in the steamer to defrost and heat up.
That’s two tamales. One broke when I was unwrapping it. The tamales were topped with shredded cheese, leftover homemade chili, homemade guacamole, homemade Greek yogurt, which we use in place of sour cream and sliced black olives.
That’s one of my favorite meals!

Tamales are one of my favorite things – especially green corn tamales. I was so spoiled living in Arizona. There was always someone making a little extra money by making tamales, and I benefited hugely! We made them once in a while, but it’s time and work and I didn’t often have time, and Paul liked to have help.
