It’s going to be a touch couple of days as far as watching games .. I don’t want either team to lose in the Texas/Chiefs game and I don’t want either team to lose in the Clemson/LSU game. What’s a girl to do??
We made sure we had all our meals planned out so neither of us would have to miss any part of the games.
Friday I seasoned the baby back ribs for smoking today and this morning Vince had the ribs on the smoker at 9 a.m.
Vince left them on the smoker at 225 degrees for 5 hours and they were the best ribs we’ve ever smoked. They were fork tender and so moist and seasoned to perfection, if I do say so myself! 🙂
We had baked beans that I had canned a while back and mixed vegetables – yellow squash, zucchini, carrots and onions.
We’ll be eating on the ribs for several days. We didn’t even eat half of one slab so we have at least three more days of ribs. Love having plenty of leftovers!

I felt torn with Texas and the Chiefs. I’m happy the Chiefs won. I’m VERY happy Seattle is losing. (Not a Pete Carroll fan.)
I want both of them to win tomorrow night.

Leftovers like that are no hardship. =)
