Yesterday I saw a recipe for Pizza Chicken (or something like that) and I initially thought the recipe looked good but realized I could make it better.
There were three chicken breasts and 1/2 of one was fine for me; Vince ate one and that left 1-1/2 breasts for another meal. I used boneless, skinless breasts but it would also be good with boneless thighs and roll the stuffing ingredients in the thighs.
I started with the three chicken breasts and cut them in half lengthwise, but didn’t cut completely through so the two pieces of meat were still attached on the sides. I seasoned the chicken on all sides and browned a bit in olive oil, then placed turkey pepperoni on the cut side.
On the Italian cooking Facebook groups, I’ve seen people recommend the Rao brand of pasta sauce and had no idea it was available here (and still don’t know if it is) but the pizza sauce was available at Walmart.
I put about 2 tablespoons of pizza sauce on top of the pepperoni (2 T. per chicken breast), then topped with mozzarella cheese, folded the top of the chicken breast back over the filling.
I sliced 2 onions, 1 bell pepper, 1 jalapeno pepper and about 10 mushrooms, sauteed them in butter, then spooned all that over the chicken breasts; then poured the remainder of the jar of pizza sauce over the veggies, and added sliced mozzarella.
It was baked at 350 for about 40 minutes, then I added shredded mozzarella and baked til the cheese was melted.
Vince loved it! I actually liked it too. I’m not so sure I’m going to like cleaning that dish though.
It’s definitely something I’ll make again.

It’s a very interesting concept! I’m not currently doing my own cooking. Yes, I found someone else to do it for me! Only 11 possibilities, though, and I don’t think experimenting is on the list. LOL
