We both love beans and eat them a lot. I can remember growing up and the first time my mom made bean soup. I think it was 10 bean soup back then. When mom made that soup, I thought it was the best thing ever. I don’t think you could buy a bag of mixed beans back then but mom and her teacher friends would buy all the beans, mix them up and share.
Nowadays, we can buy 15 bean soup mix or, as I found, a 16 bean soup mix.
I had a ham bone in the freezer and we have a fresh ham so last week I made 16 bean soup, using the Instant Pot, with the bone and the fresh ham using this recipe. Instead of using spinach, I used kale. I like kale in soup because it has more texture and doesn’t get terribly mushy.
We had grilled cheese (homemade bread) and soup. Yummy dinner on a cold evening.
I figure since the soup has pork, greens and at least some black eyed peas, I can freeze some of the soup and have it on New Year’s Day. That should guarantee we will have good luck, good fortune, good health . . whatever the tradition says . . right?

We support the Women’s Bean Project , this helps displaced women get and maintain a job. They have terrific bean soups, we even have helped them mix them up as volunteers many years in a row. Its a good organization and you get some great soups! My daughter bought us the 10 bean soup for Christmas this year. Gonna make it next year.

I LOVE bean soup, however many kinds of beans are in it! I usually mix my own, but have been known to make it from the store mix. In fact, I have some in the fridge right this minute!
