Last night, for some reason, this recipe came to mind. I used to make it all the time but couldn’t remember the name of the recipe. I googled what I could remember and came up with the recipe. It helped that I did remember that it was Matt Lauer’s recipe. Not a fan of him but do love this recipe.

If you want to make it and don’t use wine, I would suggest apple juice with maybe a little apple cider vinegar.
One note . . the chicken and marinade ingredients are mixed together and put in the fridge overnight so if you’re wanting to make it, don’t wait til right before dinner to get started.
