Friday, with the excitement about the apartment, I totally forgot about cooking but I made up for it yesterday.
It was a day of football games so I planned our meal to be something quick and easy to be eaten during a halftime . . and there were several games that Vince didn’t want to miss. I had mentioned before that found some shaved rib eye steak at Aldi. That meat is so good and it’s fork tender. The plan was to have sandwiches that meat seared with carmelized onions on jalapeno bagels with avocados and candied jalapeno peppers, along with tomato soup.
I was going to cook a chuck roast in the Instant Pot so we could have that today. I always make the chuck roast the day before so the grease can rise to the top, harden and be scraped away.
The shaved rib eye meat was retrieved from the freezer, defrosted but never cooked. The roast was cooked. I thought I was done in the kitchen . . sit back and knit while watching football.
Then, I came across several Italian cooking groups on Facebook. Back to the kitchen!

We ended up having gnocci, pesto and Vince had some with marinara and we never did eat our sandwiches.

Every recipe I read . . I wanted to stop and make it right then!
Today I am knitting. We are having the sandwiches and soup. The one thing I may make is more pesto. It’s easy and quick. We have the basil growing in the greenhouse. I’ll put the basil on the steak sandwiches instead of the jalapenos and avocado.
Really . . no cooking today and just to be sure – I’m staying off Facebook!

I think it is a good idea to cook something right away that you see on the internet, instead of the way I do it, which is to pin it to Pinterest and never see it again, lol. I probably cook .5% of what I pin and I cook a lot!

I agree. If I don’t cook something within about a week, it usually just gets added to the ever-growing list.

It looks like you had fun in the kitchen. You probably need a day like that every once in a while – especially if you aren’t as into football as Vince is.
