Pasta

Vince loves pasta, meatballs and marinara sauce. I do not like that at all. Of course, his parents came to the U. S. from Sicily so they probably had pasta, meatballs and marinara all the time growing up. Give me rice and gravy and I’m happy but I really don’t like red sauce of any kind, though I love tomatoes. Weird, huh?

We are doing keto during the week and not on weekends til after the holidays and then we’ll get back on keto full time. I don’t recommend taking the weekends off because keto really needs to be full time but at least it’s keeping us from gaining weight.

So . . yesterday was to be a keto day. I was going to make chili with a green salad.

I totally forgot that I had promised Vince pasta, meatballs and marinara this past weekend so yesterday morning, just as I was getting settled to knit the day away, Vince mentioned that he didn’t get his meatballs. Dang it! I asked if he wanted me to make it and we’d start keto on Tuesday and he said yes.

I had already taken the stove apart and scrubbed it because I wasn’t going to make any splattering messes in the next few days.

Now the stove is a mess again!

I always fry up a little flat meatball patty to test for seasonings before making them all.

Knowing I wasn’t really going to eat pasta, meatballs and marinara, I figured I’d just go ahead and blow the diet another day and made rolls. It was worth it. I froze the leftover rolls for a weekend treat or to use in the Thanksgiving dressing.

Making the meatballs and marinara should win me some extra good wife points, right?
