Yesterday when I was finishing up the soup, I asked Vince if he was going to want grated cheese in his soup. He said “No, but how about you melt some cheese in the melter?” Great idea!
We use the EZ Melter that a friend gave me for Christmas several years and we love that thing. If you’re looking for a gift for someone who likes interesting foods, this is a great gift.
The cheeses I grabbed were an Asiago with mango and ginger; blue stilton and a truffle/cheddar. All were from Aldi.
All the little wells were filled and I baked it til it melted.
After the cheese cools for just a minute, we “dip” it out with a toothpick.
I didn’t try the blue cheese because this one is very strong but Vince loves it. I think I like the asiago with mango better cold but the truffle/cheddar . . I think I’ll fill all the wells with that one next time. It was so good but I love truffle anything – truffle salt, truffle potato chips. One of my favorites is truffle zest. Often when I fix spaghetti with red sauce for Vince, I’ll just add butter to my pasta and sprinkle truffle zest and parmesan cheese over it; maybe add a little warm heavy cream. Yum!
Now I’m hungry for pasta but that’s not on the menu for a while.

I know you aren’t talking about Lindt truffles here, so it must be the fungus thing. I’ll take colby jack, please. LOL
