This is a recipe I’ve made before – Avgolemono Soup. We like it a lot. I get recipes and menu ideas from The Mediterranean Dish and that recipe was in my email a few days ago. I had just roasted a chicken for dinner and we had about half a chicken leftover so I knew it was time to make Avoglemono Soup.
Also, tomorrow we have thunderstorms in our forecast and that always means a chance of losing power so a big pot of soup in the fridge is something I can heat up on the stove if there’s no power. Today I’m cooking Pork Carnitas in the Instant Pot so that’s something else we can heat up and eat even if the power is off.
You may have noticed that I have a hard time following a recipe exactly. I added jalapeno peppers to this one.
I also added collards and kale and that wasn’t in the recipe. I have kale in the garden and had collard greens in the fridge that needed to be used
This soup is so good. Even though we had it last night, I’ll be happy to have it again tomorrow.
