Yesterday I made Pimiento & Cheese. This is the recipe I use. I’m not sure if it’s pimiento or pimento. I see it spelled both ways but I’ve always spelled it pimiento . . at least the last couple of days, so I’m sticking with that.
I really love that stuff! I like it with crackers but also I love stuffed into a stick of celery and often, I’ll take that for my road trip food when traveling.
I got out my big grater for this project. I cannot remember what this thing is called . . someone please tell me and I’ll edit this post. Several years ago, a reader told me about it and I ordered it and when I have a lot of grating to do, out it comes!
The only thing I did different from the recipe was to add some roasted Hatch chile peppers.
I always know when I’ve been out of the kitchen for too long because I want to cook and cook . . all day. I started out cooking yesterday morning, made a few things and then ran out of steam by early afternoon. Today I want to get the cabbage sliced for the kraut and get the carnitas meat cooked. I should be able to get that much done.

I’ve been thinking about that Pimento Cheese since you mentioned it. I am planning to make it soon. And I’m hoping to make my first batch of sauerkraut. I was at my sisters a few months ago and her adult son was at home. He is a sauerkraut maker extraordinaire. I bought a fermenting jar made by Kilner. I do need that heavy duty shredder for shredding all that cabbage. Hope someone remembers the name of it.

Ava, another reader said it was a MAXAM Chopper. You can do a search for it. She said amazon has it.

The “chopper” shown when I was making the pimiento & cheese is the Maxam chopper but it’s a cabbage shredder (different gizmo) that I use to shred cabbage.

That looks pretty good. I’ve never made my own. My grocery makes a good one, so I haven’t been motivated.

I have never thought to add Hatch peppers to my pimento cheese! Why haven’t I thought of that? Genius! Next time I make it, I’ll have to throw some in! Thanks!
