Today I finally got around to making the jackfruit crab cakes.
The young, immature jackfruit is what is used for the canned meat substitute.
I was surprised to see the seeds in the can. They were all cooked and edible.
I was also surprised that there are only 2 grams of protein per serving. There’s also 2 net carbs per serving so that makes the canned jackfruit fairly ok for keto.
The “crab cakes” I made had cracker crumbs so we can scratch that from being a good keto option.
I added the cracker crumbs, Old Bay seasoning, an egg, mayo, mustard, chopped jalapeno and sliced green onions.
I shaped them into the cakes and browned in a mixture of olive oil and butter.
I topped them with Sriracha mayo. They were good but probably not what I would consider a great substitute for real crab cakes. Vince seemed to like them. I wasn’t terribly impressed. Depending on how much Vince liked them and whether he asks for them again, I doubt I’d make them again.

Nope – I prefer real crab for crab cakes.
I’ve been reading about some of these meat substitutes and some of them are full of things I can’t have, like chemicals. So, I’ll stick with “clean” eating. There are fewer choices but a lot less itching.

Me too but real crab is not easy to find here unless I get it frozen and it’s sometimes not very good and always very expensive so I was hoping this would be a good option. This is organic and the ingredients are “young jackfruit, water, sea salt, and organic lime juice” so it isn’t supposed to have any chemicals.
I’m not terribly familiar with what qualifies as “clean” eating but I almost feel this would.

The label indicates high sodium – with the old bay and crackers it would be way too high for me.

Yes, the sodium content is high. Neither of us have issues so I don’t watch it terribly closely and surely wouldn’t do it every day. I kinda feel like draining and rinsing the fruit may have reduced the sodium but I’m not sure.

Does it taste like crab? If so, I’m not trying it. LOL Interesting experiment. So you would use it in fish tacos, then? It looks like a good source for iron.

Well you have to try it before you know whether you will like it or not. At least they were edible!
