Do you love one pot meals? I used to not like them so much but now, I love them, especially when there are lots of flavors mingled together.
Late last week I smoked a big brisket, then divided it into four chunks, vacuum sealed three of those and froze them. Over the weekend, I was thinking about what I could make and decided to get a bit creative and make a one pot meal. I started with diced potatoes, browned those, then added a lot of garlic and potatoes, then added the brisket. Once all that was warm, I added chopped collard greens and halved cherry tomatoes. I used Lawry’s Salt, black pepper and just a bit of cajun spices.
It was delicious and I think I may fix something similar tonight.
Tomorrow my oven part should arrive. So hoping that will solve the problem.

I love casseroles. When I have been on vacation and eating at restaurants, it’s what I want to come home to. I also like being able to get all the prep utensils and dishes clean while the casserole cooks, and have only the cooking pan afterwards!
That’s kinda sorta like a one-pot meal. I do like having the different components together.
