I love okra! I was telling Vince yesterday that I would love to have enough to eat it once a week. I figure if I had 45 pints of freeze dried okra, I’d make it from the end of this year’s okra crop to next year’s oka crop. I love it cooked in oil with garlic and onions; I love okra and tomatoes; I love the whole pots in a pot of purple hull peas; I love okra in my gumbo; I love it battered and fried. I actually love just snacking on the freeze dried okra. It’s great for a road trip. Easy to eat in the car.
We didn’t plant any this year so I’m stuck buying okra.
Before I left to go to MO, I freeze dried some to make sure it was going to work ok and it worked great. It’s one of the faster foods to freeze dry because it doesn’t have a lot of water in it to start with. It re-hydrated perfectly in all the ways I cooked it.
When we were out yesterday, I called the local veggie market to see if they had fresh okra. The owner told me it was still being picked but should be delivered soon. After we were done at United, I called back and they had it so I went by and got a 15 pound box.
Part of it is in the freeze dryer now. I might can get it all done in two loads but it may take three. I’m going to cook some of it for dinner tomorrow too. Once I get it all done, I’d like to get another 15 pounds. That may be enough to get me through the year. I’ll see how many jars I end up with.

I love okra any way you fix it! Fried, pickled, boiled, with other foods and any way you can think of to fix it. Pat only likes the boiled okra and only the small pods. I grew up on a farm and we ate what we raised and what we had. We didn’t have the option to decline any of the foods served. We either ate what was put before us or we went hungry. Believe me, I ate it and I liked it! LOL
