I couldn’t wait and had to make the Jackfruit Salsa today.
I tried to get some better pictures of the fruit. This is a piece of it.
I don’t know if you can see it in the picture but it kinda has “grain lines” so you can easily tear it, vertically as shown in the picture. I wasn’t paying attention when Vince was cleaning it but I think the “fruit” is a seed sack of sorts. You remove the seed and the “pouch” is what you eat as the fruit.
While making the salsa, Vince came into the kitchen and said “I’m going to stand here and watch to be sure you don’t eat too much!” I love that stuff.
Here’s my salsa – tomatoes, jackfruit, cucumbers, jalapeno peppers, cilantro and lime juice, along with a bit of salt and pepper.
It was every bit as good as I had expected it to be!

It looks wonderful! My problem is Pat would not eat it and I would have to eat it all myself! Darn the luck!! LOL It looks kind of like the salsa you make with peaches or mango.
