Vince made smoked salmon today. I told him that since he does such an amazing job with that smoked salmon, he should start cooking more meals. He said “I’ll think about it” and then 2 seconds later, he said “No.” I said “No, what?” and he said he had thought about cooking more and the answer is no. Can’t blame a girl for trying.
I never understand people telling me keto is too restrictive because we eat great meals on keto. Smoked salmon with cream cheese, brussels sprouts, small Japanese sweet potato with Swerve brown sugar and grass fed butter.
The thing that looks like a potato is a Japanese purple sweet potato and even though eating a small one caused me to go over my net carbs by a few, I don’t mind occasionally, especially for something as nutritious as a sweet potato.
Added into those numbers are a couple of strawberries and a few slices of turkey pepperoni I’ll have for a snack about 5 p.m.
A healthy meal, fairly low carb and tasted great . . can’t beat that.

I’ve never seen a Japanese purple sweet potato around here. Where did you find it?
