Our meal today was Bacon & Mushroom Smothered Pork Chops. This was so delicious. I started cooking it this morning and could hardly wait to eat.
To start with, I was able to get a pork loin last week that was marked down to $5.50. Knowing I would use it soon, I just stuck it in the freezer without even repackaging it.
This morning I cut the loin up into chops, seasoned those and browned them in oil
After removing the pork chops from the pot, I added chopped garlic, onions and jalapeno peppers.
I had a container of mushrooms but I also have a big bag of dried “Forest Blend Mushrooms“. I love these mushrooms – they’re earthy and a bit chewy. The local Thai restaurant uses something similar and I always ask for extra mushrooms .. which the Thai lady calls “fungi”.
I soaked the dried mushrooms in water and then used the water instead of chicken broth in the recipe. I used these mushrooms in addition to the package of fresh mushrooms I had.
Here it was simmering. At this point, I wanted to eat it right out of the pot.
We ate it over cauliflower rice.
Things I did differently from the recipe:
- I added onions and jalapeno peppers.
- I used the soaking liquid (water) from rehydrating the mushrooms instead of chicken broth.
- When serving, I added sliced green onions and chopped Roma tomatoes.
This is a recipe I highly recommend – keto or no keto! It’s delicious and it’s a one pot meal except for the cauliflower rice.

That does look good. I’m not a fan of mushrooms, because every one I’ve ever had tastes like dirt to me – mud pies, and yes, I do know what those taste like! =) Nevertheless, it looks good!
