Here’s my tracking info. I’m happy with what I had today – no focaccia, no pizzelle! 🙂
Dinner was so good! Vince said “Aren’t you glad we eat at home!” Yes! I am thankful every day that I love to cook and Vince will eat anything I serve.
The carrots are pretty high in carbs but I don’t eat the “sauce” so I’m hoping I don’t actually get all the carbs the numbers say I’m getting but I still managed to stay within the number of carbs recommended.
Breakfast was a fried egg and a piece of sausage. Dinner was guacamole, copper penny carrots, coleslaw with oil/vinegar and grilled chicken, okra and a fermented pickle slice.
I still have 1 T. of MCT oil but it’s figured into the numbers already.
We’ve been watching a series on preventing Alzheimer’s and we’re trying to incorporate more avocado, fermented foods, veggies, etc. into our diet. I think we already do a good job of eating a good meal most days but learning more helps us eat better and makes us less likely to eat the things that provide no real health benefit.

Look tasty to me. But I had to chuckle because the only things on your plate that my picky eater husband would have eaten was the chicken and the dill pickle. And only if the chicken didn’t have any suspicious marinade or sauce on it. I used to like to cook, but he’s is so picky and after 43 years I find little job in cooking anymore. But I do enjoy seeing what other folks are cooking.

I agree. Cooking is no fun at all if there’s a picky eater to be pleased.

I love the fermented foods every day. A glass of Kombucha, a glass of Kefir, 2 TBS fermented veggies and a fermented pickle. Toby has early stage of dementia but it is slow to progress. He will not touch anything fermented as much as I try to get him to. Anything else he will eat whatever I serve. Happy to hear Vince will eat the fermented foods.

Did the carrot recipe I sent you look good? I love them but I haven’t made them in years! Maybe I need to get back to doing that! LOL

It looks perfectly delicious! I love most of the non-Alzheimer’s foods, especially avocado.
