When I freeze dried the okra last week, I put in a couple of small pods to see how it would work freeze drying whole pods. It worked fine so that’s what I put in there today.
Lightly salted . . not sure if that’s going to stay on there or if it will flake off. The okra was damp when I put it in so I’m hoping during the freezing process, the salt will stick like glue. Actually, by the time I put it in the freeze dryer, most of the salt had kinda dissolved so I think there should be enough salt on there to give it a good flavor.

I ended up with this much okra left over. I kept out the large pods and then some of the small pods were leftover after the trays were filled. I’ll probably switch out some of our veggies this week for okra. We do love it!

I also love okra, but I rarely see it out here in California. Sometimes I can find it frozen.

Vince and I were talking tonight and wondering if it’s much easier to find here in the south than other places. I don’t think it’s as popular here as it is in Louisiana.

I love okra, fried, boiled, pickled, any way you want to fix it. I have some in the freezer to use in soups and stew this winter. My brother brought me a new bag of okra, tomatoes and yellow squash today. Want some yellow squash?? LOL

Oh, that IS beautiful okra! I like okra a lot, because my aunt introduced me to it, and made delicious okra and tomatoes. When I go to Cracker Barrel, I often give in and have the fried okra – so yummy!

I have actually had to buy okra this year. We had so much rain, that my okra has done nothing. It’s not even knee high on me yet, and I planted it back in May. Right now I should be drowning in okra…I don’t think it’s cost effective for me to purchase a freeze dryer, but it is tempting just for the dried okra!

Yes, just for okra I wouldn’t recommend it but there might be other things you’d enjoy using it for.

You can pre-hydrate the pods and then add them to peas/beans (not low carb foods). I also slice it before dehydrating it and then pre-hydrate it in some hot water to add to soups/gumbo. We love okra.

I like to crumble it in okra because most of our friends and some family will not eat it if they see it. When I cook peas and beans, I’m always so afraid I’m going to walk off and forget about them and scorch them that I add way too much water. Adding the dried okra helps absorb some of the excess water and the okra has been rehydrated in “bean juice”. 🙂
