This afternoon I had to go to the dentist and when I left there, I ran by the grocery store to get chicken livers to make food for Rita. I found these Ribeye steaks marked down from $17.25 to $12 and they looked good so I got them.
I already had leftovers out of the freezer for tonight but it was Buffalo Chicken, which was supposed to be for tomorrow but I saw that first so I took it out. They also had fresh okra at the store so I bought enough of that to freeze dry and we had some of it with peas for dinner.
The steaks are seasoned and drizzled with olive oil and in the fridge waiting to be grilled tomorrow night. I’ll fix steamed broccoli and the caprese salad with them. Then, I’ll move the Asian Meatballs to Wednesday and instead of having leftover prime rib on Friday, it will be the first time we have it.
Also, on Keto, I usually eat one meal a day but since I had to go to the dentist, I didn’t want my tummy rumbling so I fixed a bit of lunch. It’s celery stuffed with leftover turkey with basil mayo from yesterday, a cheese stick, walnuts, almonds and a few slices of turkey pepperoni.
It’s a bit of a balancing act – I need the nuts to help lower the cholesterol but they’re high in carbs. I figure the benefit of eating a few walnuts and almonds is worth slowing down the weight loss.
People often think we eat a ton of meat and fat on the keto diet and some people do but, for the most part, we do not. There was probably less than 1/4 of a chicken breast in the dinner casserole. According to my Carb Manager stats, I was short today on protein and fat . . the nuts threw me over on carbs but that’s just the way it is for right now.

I am just curious – how do you get enough protein if you only eat one meal/day?

You are eating healthy, and that’s the most important thing. No sense in losing weight and also losing some health battle. I don’t think those few nuts will send anything spinning!
