This week is kind of a clean out the freezer week:
Monday – Asian Chicken Meatballs (leftovers were frozen 2 weeks ago), brussels sprouts, Caprese salad
Tuesday – Buffalo Chicken Cauliflower Mac & Cheese (leftovers were frozen 2 weeks ago), Coleslaw, Sliced Avocados
Wednesday – Prime Rib (in the freezer – got on sale after a holiday), steamed broccoli, salad
Thursday – Herbed Chicken & Mushrooms, Cauliflower Rice, Coleslaw
Friday – Leftover Prime Rib, Okra, Green Beans
Saturday – Grilled Chicken, Cauliflower with Pumpkin Seeds, Brown Butter and Lime, Deviled eggs

Most of that sounds delicious to me. You can have my mushrooms, though. I can’t believe it’s been two weeks since the first two recipes. Time is zipping fast!
