Well, it isn’t actually gone but most of the carcass has been thrown out. The rosemary stuffed breast must have been bigger because it took longer to get to 165 degrees so I left it in the oven while we had lunch – roasted turkey breast, homemade cranberry sauce (that I made and canned last year when cranberries were so inexpensive), borlotti beans that I grew and canned a couple of summers ago,and coleslaw. Oh, and I did make a pot of turkey bone soup and we had some of that for lunch.
Vince pulled off the meat from the thighs and legs and that filled up most of a gallon ziplock bag. I’ll grind it tomorrow and freeze it in one pound bags. I’ll probably get at least three bags . . maybe more.

A bit of turkey meat, with broth, and an extra container of broth, for making turkey and dressing, which will probably be on next week’s menu. If I don’t make it soon, I’ll forget it’s in there! It isn’t low carb but neither is the turkey bone soup. Don’t blame me . . I didn’t buy the giant turkey!

One not-low-carb meal a week shouldn’t cause problems. Could you take that soup stock and put in vegetables instead of the pasta? Would that help? Enjoy your turkey everything! I must say you took a mixed blessing and did a lot of good with it. =)
