Tonight’s dinner was Buffalo Chicken Keto Cauliflower Mac & Cheese. A couple of times I’ve substituted cauliflower for potatoes in dishes and they were ok . . not something that left me wanting to make the dish again real soon. I think it’s harder when you’re trying to imitate. Cauliflower in place of potatoes or rice . . it’s fine as cauliflower instead of potatoes or rice but it will never make me think I’m eating potatoes or rice. It’s all in how you look at it. Would I rather have potatoes or lose weight? I shouldn’t answer that question!
I didn’t think of this as fake mac & cheese . . I thought of it as chicken with cauliflower and let me tell you . . I think I could have eaten the entire pan by myself. It was so good and I wanted to drink that cheese sauce. Several times while we were eating, Vince said “This is so good!” and it was.
It was a bit more trouble than some of the things I make because I browned the chicken in a skillet, then made the cheese sauce in another pan, then roasted the cauliflower in a baking dish. It wasn’t so much trouble I wouldn’t make it again tomorrow but it was more work/mess than anything else I’ve made this week.
The dark pan went into the freezer. From each pan, we’ll get two meals so . . four meals from that work . . not bad at all. This is another dish I think anyone would be happy with . . diet or no diet.

It does look pretty darn delicious! My husband is gluten free and insists he doesn’t like cauliflower (though I’ve never fixed it in 41 years of marriage so….) but I’m going to make this and not tell him what’s in it ahead of time; still no guarantee he’ll try it but worth the attempt. Maybe if he likes this, he’ll give those cauliflower flatbreads a try as a bread substitute; so far he won’t but he really misses sandwiches. My attempts at homemade GF breads have all gone into the trash, as have every single brand I’ve bought so far. Did I mention he’s also super picky?? But we don’t like hot things or bleu cheese, so Judy, any idea what I could substitute for them? I was thinking maybe a bit more mozzarella, but no idea what wing sauce might be flavorful but not hot. Cuz guess why? He doesn’t like wings either!! Only the fake white meat boneless kind…. thanks in advance!

The recipe seems easy enough, not sure what the buffalo sauce is though. Did you make any changes to it?
