They were delicious!
I used the Asian Chicken Meatball recipe from Peace, Love and Low Carb. I followed the recipe exactly except I used one pound of ground turkey instead of two pounds of ground chicken (because Aldi had ground turkey and no ground chicken) so I used half as much of everything else. We probably like our food a bit more spicy than most but next time, I’ll use more of all the spice/seasonings. They were delicious but I think we’d like them better with a bit more ginger, garlic, cilantro and sesame oil.
For the dipping sauce, I added a bit more brown sugar. I was using the brown sugar with erythritol, which I think tastes great as far as “diet” sugar goes. It still seemed like it needed something so I added a bit of grated ginger and I think the sauce was perfect.
Even using just one pound of ground turkey, I made 9 little meatballs for Vince and 8 for me and only used half of the meat mixture so I stuck the rest of it in the freezer for a meal week after next. I already have my menu plan done or next week and as soon as I finish one week’s menu plan, I start the next one so I can add leftovers to that meal plan and not forget about them in the freezer.
We will definitely have this recipe again but I’ve never had a recipe from Peace, Love and Low Carb that wasn’t delicious.

When I went to look at the recipes the other day, I found several that I liked, Keto and carbs or not. This fall, I will try some. The bean-less chili sounds perfect, because I like it that way anyway.
