These were so good but I love reuben sandwiches. I meant to sprinkle a few caraway seeds on top of mine but I forgot.
I used the Reuben Stuffed Mushrooms recipe from Love, Peace and Low Carb but I used big portobello mushrooms and we made a meal out of it.
Except for the corned beef and the mushrooms, we had everything at home to make this so it was inexpensive to make.
For the mushrooms, I used a grapefruit spoon to scrape out the gills. The one on the left has been scraped and the one on the right has not been scraped.
This is a recipe we’ll be having often . . diet or no diet.

Looks good. If you use smaller mushrooms, they would be great as finger food for a party. The recipe says it keeps well overnight, so can you imagine warming up the mushroom and adding an egg on top – a modified corned beef hash with egg.

Duh…except for the two MAIN INGREDIENTS you had everything it took to prepare this, so it was inexpensive to make??? Am I missing something here?
