I have not been posting my men plans. I haven’t been great about doing our menu plans but now that we’re back committed to low carb, I need my plans.
In the future, I’ll post them on Saturday morning so anyone wanting to use part of my plan can have time to make changes to suit your own needs, buy whatever you need and get your own plan ready. I don’t post menus for Sunday because that’s usually our “clean out the fridge” day. Eat whatever is left or figure something out!
Every day that I cook, I’ll try to remember to take pictures and share my thoughts on the recipes. These recipes look amazing and I think I’d want them even if we were not on a low carb diet. This doesn’t seem like diet food to me!
For this week, or what’s left of it . .
Tuesday – Reuben Stuffed Portobello Mushrooms, Steamed Artichokes, kimchi
- The peace, love, low carb lady used smaller mushrooms but we’re having them for a meal so I used big ones and the recipe filled two mushrooms.
Wednesday – Asian Chicken Meatballs, Steamed Broccoli, Pickled Carrots
Thursday – Corned Beef, Cabbage, Pickled Asparagus
Friday – Buffalo Chicken Cauliflower Mac & Cheese, Coleslaw
- This will make enough that I can freeze part of it before baking and have another meal.
Saturday – Leftover corned beef made into Reuben Stuffed Portobello Mushrooms!
- Those were so delicious, I may want to have them once a week.

At least two of those recipes appeal to me, and I always love corned beef and cabbage! Paul always fixed it on St. Patrick’s Day for me, and usually other times, too.

I looked at the recipe for Asian chicken meatballs. I don’t have coconut flour. I do have almond flour. Think it could work?
