First, I know what you’re all thinking . . the diet! We start back on it TODAY! But, I seriously sometimes amaze myself. Until we moved here, I cooked three meals every day! Vince had a cooked breakfast most every morning; he came home for lunch every day and we had dinner at home. While Chad was in college, I’d save leftovers and freeze them for him to take back to school every week. He came home every weekend for work so that worked out . . better for him than for me.
But when we moved here, Vince decided he mostly didn’t want a cooked breakfast. I think it was because I sat down and ate with him and I talk . . a lot, and I think he was happier eating a bowl of cereal in peace so I just slept in.
Then I’d fix lunch but with the garden and all the things I was doing around here, I was too tired to cook dinner so Vince ate leftovers or sandwiches.
On the keto diet, I try to eat one meal a day so if I’m not eating . . I’m not cooking so nowadays, I cook one meal and it’s usually served around 3 p.m.
Saturday Vince wanted waffles for breakfast so I fixed the overnight sourdough waffles. I made the full recipe so we had plenty of leftover waffles. He had been wanting chicken & waffles so Sunday evening, I took four chicken breasts, sliced them in half to make 8 thinner pieces of meat, friend all 8 of them but I think we only ate 3 pieces.
Yesterday, since we weren’t back on our diet, I kinda planned to make a spaghetti sauce and put some leftover chicken in it and serve it over pasta. Then Vince said he’d rather have the chicken in a gravy.
I made a roux, then I put onions, garlic and jalapeno peppers in it and made it into a gravy, cut up three of the leftover chicken breast pieces and made chicken and gravy.
I added chopped chives and parsley but forgot to take a picture. It was so good . . and there are two chicken breast pieces still leftover. Today I’m going to chop them up, and even though there’s some breading on them, make them into a chunky chicken salad for our meal.
That’s three meals we’re getting out of four chicken breasts. This is all so different from the amount of cooking I used to do. I like this lifestyle a bit better. I do like to cook but I don’t like to spend all day in the kitchen.

Yum – rice and gravy is one my very favorite things. My mom always cooked a small pork roast in with a small beef roast and the combination made the BEST gravy.

I try not to do any more than I have to in the kitchen! I do not like to cook. I have no imagination and besides my husband is so picky when he eats it is hard to fix anything for him.

I don’t even like to cook. It’s a necessity, but I have always been sort of indifferent to it, though when I cook, it turns out well. Paul *liked* to cook, and was very creative, so he took over that and became awesome at it. With his passing, I have not ever come back up to the mark. I always like seeing what you are making, though!
