It was in 2016 when I first heard about black garlic. I didn’t even know there’s such a thing as a pot especially for making black garlic. You can see in this blog post that I tried a rice cooker, a slow cooker and my proofer. We liked it best out of the proofer. I can’t say how it would be in the black garlic pots but since I already have the proofer, I’ll just keep using that.
Black garlic is a bit addictive. Here’s an article that might give you some insight on how it tastes and how you could use it. I’d like to freeze dry some of it, powder it and maybe mix it with some salt to sprinkle on our food.
Here are instructions for using the proofer. I do have the older model FP-101 so I now keep my temp at about 102. I actually keep it about 104 because we keep our house cooler than most people and I think that affects the temp in the proofer a bit.
I was able to put 20 bulbs of garlic into my Instant Pot metal pot. I have an extra pot that I shouldn’t need for three weeks.
The pot, with a lid went into the proofer, where it will stay for 3 weeks.
As much as I hope to find a house in Arkansas soon, I’m kinda hoping we don’t have to run over there in the next three weeks or I’ll be begging a friend to babysit a pot of garlic!
