Is it possible to feel brilliant, and at the same time feel like a lazy slug? Good! That’s how I was feeling — brilliant and quite lazy. All I want to do is knit but I have to get these files downloaded. I told Vince I’ll download five pages per day and that will take me about 9 days to do it all and he thinks I should get it done and be done. He said “Do 5 pages in the morning and 5 pages in the afternoon and be done in less than 5 days!” That’s non-stop downloading.
Then, there’s dinner. We have to eat! I had chicken thighs out for dinner today but I had no idea how to fix them. The quickest thing I could do was put them in a foil pan and stick them in the smoker. That also doesn’t make much of a mess. The thighs were boneless, skinless and the recipe I use in the smoker needs skin so I put a bit of butter in the “cavity” where the bone had been removed, then I wrapped them in bacon. That’s kinda like skin, right?
I opened the veggie drawer in the fridge to get some jalapenos and saw brussels sprouts that needed to be used so I cut them in half, tossed them in too. I grabbed a purple onion out of the garden, skinned some garlic and added it. A few pats of butter and seasoning and this dish went into the smoker.
Vince loves purple hull peas and I have some left over from Monday so we’ll have those, along with sliced tomatoes and that’s it. I may wash the foil pan and use it again or I may toss it.
Because I think it’s going to be yummy, I feel brilliant. Because I tossed everything into one dish and stuck it in the smoker, I feel lazy.
What makes me even happier – there are 7 thighs in that foil tray so that’s enough for at least two meals. Yep . . lazy! 🙂

I just bought a smoker. I’ve been living under a rock!!!!! Why has it taken me so long to buy one??? I’m frugal so I put 4 different meats in it that will be 10 meals. 8 went into the freezer. Tri tip 3 1/2 lb roast was the first night. That roast will be 4 meals total. Last nites chix breast was also to die for. Tonite reheating half a rack of ribs. I bought a propane fired one for its easiness. The books says I can smoke ice cream……hmmmmmm…..!!! And make a cheesecake.

You are not lazy! I call that being thrifty! You are cooking 3 meals at once so you don’t have to head up the smoker again for this. You also used things that needed to be used right away and that is very frugal. So you see, you are not lazy at all! You are a genius!!
