Yesterday Vince went to the grocery store when I went to town to get my hair cut and get the tires balanced. I said “Do not buy anything except what’s on your list!” because we’re seriously trying to use what’s in our freezers. He came home with a pork loin.
Me: Why did you get that?
Vince: I want to smoke it.
Me: YOU are going to smoke it?
Vince: Sure!
No . . he was NOT going to smoke it and I knew it. It doesn’t matter. I’m the one who does all the smoking and I don’t expect him to do it but I thought it was funny that he said he was going to do it. He did clean out the smoker and put fresh foil in it to line it and catch the drippings and I really dislike that part.
I brined it overnight, mixed up a dry rub and covered it with that this morning.
Stuck it in the smoker about 11:00.
It smoked til the internal temp reached 160.
It was served with pinto beans and leftover squash.
A little cheese on the squash; a little chopped jalapeno on the beans . . delicious and the best part – there’s a whole lot of it leftover so we’ll be having smoked pork loin for several days.

I love when we have leftovers! There are some things Pat will not eat that are leftover and most of the time I agree with him. This looks wonderful!

oh, wow! That looks great. We have a smoker still in the box since last year. I will show this picture to James and maybe get that box unloaded.

Looks delicious. I like to cook something and graze off it all week. I don’t do it often any more because my son eats the leftovers before I can. LOL
