I called Vince in for dinner and when he opened the door, he stopped and said “It smells like Louisiana in here!” What a compliment! When Vince and I first met many years ago, he wasn’t so crazy about Louisiana food and he thought my cooking was too spicy but either I’ve toned it down or he’s gotten used to it because he loves it now. In fact, the other morning, it was about 10 a.m. and he said “You know what I would love to have today?” I said “What?” and he said “A sandwich from Darrell’s!” That probably my all time favorite place to eat in Lake Charles. I said “That isn’t going to happen!” He said “It could if we get in the car and drive like hell!” Nope . . we didn’t.
Our meal today was leftover prime rib, roasted garlic, mixed greens from the garden (mostly collards) and cream peas from last year’s garden. The greens were seasoned with sausage from Zwolle, Louisiana and that’s what caused the kitchen to smell like Louisiana.
I’m so happy that I love to cook; that we love having a garden; and that we both would rather eat at home than most anywhere else . . except for a sandwich from Darrell’s! 🙂

Neither hubby nor I can handle spicy, so I don’t cook spicy. And dear hubby only likes his steak pretty much burned, so I certainly couldn’t cook beef like that. We used to eat swiss chard when I was growing up, but hubby isn’t on a first-name basis with ANY vegetables except lettuce, onions, radishes and cabbage (only in cole slaw-otherwise he won’t touch it.. ) Guess that explains why I cook the way I do. As a teenager I always said I would never marry anyone who was as picky an eater as my father…I didn’t follow through. Hubby is much worse!
I’ve also decided that, as much as I’d like to, I can’t see myself doing Keto. Hubby would have to have a separate meal and I have trouble just sticking with counting calories…no willpower, so I think I’d have a difficult time doing it correctly. I’m not going to fix 2 meals for each meal, so I’ll just keep plugging along trying to track calories. Nice that you’re having such success!! I’m a teeny bit jealous! 🙂 Congrats!!

I’m getting a prime rib for Mon, definitely. What do you do with the garlic on your plate? Mix it with the other foods? I love it, just never had an entire bulb. I’m full of questions….what are cream peas? Keep posting your meals. Luckily husband will eat most anything.
