I’ve kinda stopped posting our meals because I figured no one really cares what we eat but there’s a comment today about the Keto diet being difficult because of having to buy weird stuff. It just isn’t so.
Let me say right here – I’m not pushing this diet. I’m just sharing the phenomenal results we have had. We are not hungry . . every. Most nights Vince is saying to me . . you have to eat more!
Even though I knew how much weight Vince had lost, until I saw his blood test results, I wasn’t going to jump for joy but I think now that those are in, it’s time to jump a bit. Instead, I went out and dug more garlic!
Since just four months ago, when I wasn’t real sure about the keto diet, we have learned so much. If you’re thinking about this diet or if your spouse needs to be on this diet, here are a few things to remember.
- Carb Manager App – there’s a free version and one with a little more details that can be purchased. I think this is a must. The first week or so, we weren’t using this and we were guessing at macros. With carb manager, you simply put in what you’ve eat, or what you plan to eat for the day, adjust the portion sizes, add or take away foods to get where you want to be. It makes everything so simple and the macros are perfect and it all works together to produce rapid weight loss. You can see above (the screen shot of my Carb Manager listing for today) that I got very close on all the macros.
- Eat what you like! If you don’t like sauerkraut . . don’t eat sauerkraut. If you love broccoli, it it often.
- Basically cut out all starches, pasta, bread, cereal, sugar and stick with some amount of protein and a lot of leafy green veggies and healthy oils (butter, olive oil, MCT oil), it is truly the easiest diet ever. Healthy fats include avocados and we try to eat at least one per day.
The confusion, I think, comes about because so many people think you can live on bacon and eggs and have this be a healthy way of eating. We are eating way less bacon and eggs than we did before the diet – mainly because we’re not eating breakfast.
I truly understand when some of you say your spouse will not do this with you. I went to Missouri determined I was going to stick with the diet and I didn’t. It’s hard when those around you aren’t eating what you’re eating and it’s even harder when you’re having to cook for others and it’s foods you cannot eat. I get that.
But, for me, Vince being able to get off statins has been amazing. If someone I loved, or myself, were on those and I thought there was even a small chance that a diet, along with some exercise, could remove those from our life, I’d be on it before the end of this day!
There are many weight loss plans that work . . keto isn’t the only diet out there. Again, I’m not pushing this diet but simply sharing our results and wanting everyone to see how truly simple it is.

Oh, I’m very interested in your meals! We’ve been trying to learn more about Keto the last 17 days. We are eating breakfast…and 1 large and 1 small meal a day. Not really hungry, but I must say, the recipes I see online do have a lot of ingredients that are unfamiliar to us.

I love reading about your keto meals! Don’t get me wrong–I Do Not cook! However, I lovingly pass your recipes on to my husband, who does! Thanks for the Carb Manager tip, too! My husband downloaded it and realized that he hasn’t been eating nearly enough fats in his meals. Sounds crazily counter-intuitive to losing weight, but it’s true! Thanks for sharing your journey.
