When we first talked about going on the keto diet, like so many people probably think . . all I thought about was meat, salad, avocados. The more we’ve learned the more variety we have and we do have some yummy meals.
We have not eaten one bite anywhere except home in over two months. That in and of itself is pretty amazing. In two months, I’ve had maybe 5 Dr. Peppers. Prior to the diet, in 60 days, I would have had at least 250 cans of Dr. Pepper. I’ve always said . . it isn’t what I eat, but it’s what I drink that’s causing the weight gain and that’s probably very, very true.
We ventured a bit off the keto eating because you might notice a little bowl of pinto beans over to the right of my plate. I love pinto beans and even though there are about 15 net carbs in 1/2 cup (and I’m only supposed to have 5 or 6 net carbs per day!), about once every couple of weeks, we have pinto beans.
Honey Bee Health Food Store here has the tortillas and while they aren’t keto, they are only 5 net carbs. Vince grilled the fajita meat we bought on sale at Aldi the other day, along with ancho peppers and onions. I made guacamole, grated a bit of cheese, cut up a few grape tomatoes and we had a feast!
We’re still doing great. Not feeling like we’re having trouble staying on the diet. Vince still has more energy than I’ve seen in years. I’m so glad we’re doing this.
