Just for encouragement for those who are thinking of doing the keto diet, I can’t tell you how easy it is to prepare the meals and stay on it.
Saturday Vince smoked steelhead trout and it was so delicious and will last us through at least four meals. We had fresh collard greens and salad with the smoked fish.
Yesterday Vince grilled lamb, chicken and ancho peppers. I fixed zucchini and onions. The local grocery store had chicken breasts, buy one/get one. I bought four packs of three chicken breasts for $15 and divided them up into two breasts per package. The breasts were so thick, I cut each one in half lengthwise so that was four pieces of meat and then I only ate half of a half so that’s 1/4 of a chicken breast. Vince at the other half of the half breast. We also had the lamb but just say between us, we one breast, that means I got 12 meals worth of meat for $15. Not bad!

Cupcake chicken! I fixed pinto beans with the chicken. It definitely isn’t keto but I love beans and have to have them every now and then.
The best news:
- There’s enough salmon left for several meals.
- There’s enough grilled chicken breasts left for at least two meals.
- There’s enough cupcake chicken left for at least two meals.
I think I’ll have lots of knitting time this week!
Tonight I will cook some eggplant and serve it with the leftover zucchini and leftover salmon.

How do you fix your eggplant for Keto? Only way I liked eggplant was in a casserole with lots of other not healthy things or fried. I need a new way to enjoy it.

Yum, I love egg plant lasagna (and that’s no pasta!) and moussaka and other good ways to eat it, but not fried. Baked is good, though.
