For those unfamiliar with the Keto diet, you do need a certain amount of fat. Most people who haven’t read and studied about keto think it’s all about eating bacon and butter but that isn’t true. Yesterday, for example, I had a boiled egg for breakfast, we had smoked steelhead trout and collard greens for dinner and I had a few blueberries for a snack. I lost .7 pounds.
Here’s what my macros for the day looked like. Pretty close! That includes a chocolate walnut fat bomb that I had for a snack. I don’t usually eat fat bombs. The purpose of them is to give us a little more fat because, depending on what we’re eating, it’s sometimes hard to get all the fat we need. While looking for something in the freezer yesterday, I found the chocolate walnut fat bombs that I had made in August. They were all wrapped in individual pieces of plastic wrap and in a zipper bag so they were still very good.
I had made them before I went to MO in August so I’d have something sweet for the road. Because of the coconut oil, they remind me so much of an Almond Joy. Even though I’m not much of a chocolate fan, there are a few chocolates I do love and Almond Joy is one.
I’ll be making these again. They’re so great when I’m tempted for a little something sweet . . instead of eating something I shouldn’t have, I can have one of these.

Saturday morning we had a chocolate specialist/educator speak to a women’s brunch and she provided a tasting. Informative, surprising and fun! What cocoa product did/do you use? Curious. I was quite surprised at the health benefits of GOOD chocolate.
