Dinner tonight was the easiest recipe ever and it was so good.

It’s Buffalo Chicken Wedge Salad though I left off the carrots so I can have a few (as in 4 or 5) blueberries tonight. What made it super easy is that I used chicken that I canned last year.

Actually, I used about half the jar of chicken and saved the rest to make something in the next day or so . . maybe this recipe again!

So no one gets confused . . the chicken was in a quart jar. I poured what I didn’t use into a 1-1/2 pint jar.

I was able to shred it with my fingers and that saved so much time. It really was a great salad. Vince said “I can’t believe you ate everything in your bowl” because I haven’t been doing that but it was that good!

Do you make your own dressings? I think just about all bottled dressings have sugar or HFCS, but maybe you don’t use so much dressing that it’s a concern.

Canned chicken always looks so yucky, but it is tasty and does shred easily. I should get off my buns and make something tomorrow. =)
